Hey this is Jessica! Busy day! Sorry for the late post. Please don't follow my bad example going to bed after 10'clock.
Today was a very simple day as far as meals go, everything else? Not so simple :)
Breakfast
Today I again started the day taking probiotics and supplements. After the appropriate time I had the whey protein shake. All of this combined is very filling to me and ended up being my only breakfast.
Lunch
The girls and I went on a play date around lunch time so I had to get creative about what to pack easily that also fit into the restrictions of the first phase. I had some coconut wraps left over from the other day so I put lettuce, sliced turkey, goat cheddar and mustard in the center and rolled it up! I added some carrot sticks to complete a yummy and easy on-the-go mommy meal.
Dinner
For dinner I sauteed asparagus in butter with a pinch of salt. In a separate pan I also sauteed some sliced carrots in butter with a pinch of salt. Once the veggies were beginning to become soft I heated up some grass fed Italian sausage. Once the sausage was almost done I fried one egg in butter. Delicious!!!

Day 2 and 3 Menu!!
Hi Everyone!! Sorry I didn't get to blog yesterday, but I will catch up today. The number one reason I wanted to blog was to record the new recipes that I am creating while going through the Transformation. How is everyone feeling? It is a different feeling isn't it? Its really good. Wonderful things are happening in your body!!!
So, yesterday I had my goat milk and whey protein drink for breakfast. I really enjoy it and my nails are growing like crazy!! Its very filling and sustains me till lunch. For lunch I had leftovers from Monday nights chicken dinner. One piece of chicken with spinach, and onions and a side of broccoli. For dinner I made an amazing fish dinner. It really was one of the best fish dinners I prepared ever!! So glad I took pictures and remember what I did:)
Pan Sauteed Cod Filets
2 large pieces of thawed Cod filets
3 T butter
1 medium onion diced
2 or 3 organic plum tomatoes
1 green pepper
Dried parsley
1/2 large lemon squeezed
Garlic powder
Herbamare
Redmonds Real Salt
Melt butter, saute peppers and onion for a 5 minutes, and tomatoes and make room in the pan to lay the filets. Sprinkle salt, garlic powder, herbamare and parsley over fish. Squeeze lemon over fish. Simmer for 10 min. on each side.
I served this with a chopped salad and dill dressing. The dill dressing was amazing with the fish. Also, garnished with avocado:)) Really yummy and another 30 MINUTE MEAL!!!

Pineapple, 3 slices raw goat cheddar cheese and a hand full or two of crispy almonds:) Went to my daughters for dinner on the way home and she made asparagus, Italian sausage, a fried egg and cooked carrots. We had a 6 oz. blueberry goat yogurt right after for dessert:))

48-Day Transformation - Day One
Day one done out of 48!
My name is Jessica (Menzel) Brown, daughter of Dr. Michele Menzel. I am going to be recording on here what I make each day to eat as we all venture along on this challenge. Hopefully it can inspire you and give you ideas for yummy deliciousness!
Breakfast
This morning I started the day with probiotics and a workout. After the workout and feeding the kiddos I enjoyed a whey protein raw milk shake. This was filling enough for me today. After the workout, taking care of two little girls, a shower and morning housework, time had flown! Time to think about lunch!
Lunch
Since I had the shake for breakfast I knew I wanted to have eggs for lunch. I sauteed diced onions and tomatoes in butter. After whipping three eggs I added them to the pan with a pinch of salt. Once the omelet was cooked through I added raw goat cheese to the top. Yum!
Dinner
Tonight I had something new I definitely wanted to try, coconut wraps! My mom had just recently got them in stock at Energetic Wellness. I sauteed chopped onions and sliced carrots in a pan with butter. After the veggies were fairly soft I added thawed ground lamb. In a separate pan I melted butter before adding chopped rainbow chard, letting it wilt. As the lamb was browning I added a little salt, pepper, garlic powder and ginger, tossing it all. Once the lamb, onions and carrots were done, I took one coconut wrap out and placed one serving spoon of the meat mixture in the center of the wrap topping it with the wilted chard. I wrapped it all up and Oh My Gosh!! So good!!
