40 Day Challenge By: Jessica Brown

In the first Phase of the 40 Day Challenge it may seem discouraging that you are limited in your food variety but in reality it is so exciting and fun to create some new tastes and combinations using the foods you are allowed to consume. A great breakfast are eggs. This perfect food is power packed and a wonderful way to start the day after a good workout. the protein will sustain your energy and keep you full till lunch.
I really enjoy omelets. One great thing about the Phase One foods is that there is a nice amount of vegetable options. Really take advantage of all those veggies during each meal. Omelets are a wonderful way to get lots of veggies in one meal.
For a one serving omelet place one tablespoon of butter in a small saute pan. Turn the burner on med high heat and let the butter melt. Once the butter has coated the pan place your chopped veggies down in the butter. The veggies can be anything on the Phase One Foods list. Some of my favorites are onions, mushrooms, spinach and carrots. Cook the veggies until they are easily speared with a fork. Next beat two eggs in a bowl with a little bit of goats milk (this adds a nice fluffiness to the eggs). Turn the burner down to a med low heat and pour the beaten eggs over the vegetables. Shake a little salt and pepper over the pan. After the egg seems to be cooking and coming away from the pan, take a spatula and flip the omelet. Let the omelet cook for a little on the other side. Remove from the pan to a plate and enjoy!

40 Day Challenge By: Jessica Brown

During the first phase of the 40 Day Challenge you are limited to only certain vegetables and proteins as listed in Energetic Wellness's 40 Day Challenge Booklet. The first week is relatively easy. For me I was running on a high of excitement about getting my body in balance and losing my post baby weight. I found that during that first week I had a lot of energy, but once that first day of the second week started I felt completely awful. This is when I knew that some real sugar detoxing had kicked in. Sticking to the diet is so essential if you are going to achieve the desired results. Once in the second week I realized that I had been eating very large portions of the vegetables and proteins. It was easy for me to think that a could eat as much of them as I wanted, but I wasn't losing much weight. I then started to cut down my portions and right away I saw weight loss results. As you prepare to begin the 40 Day keep in mind that portions are extremely important.
